El interés por la recuperación y conservación
de la raza porcina Celta, reducto sobreviviente
en España del denominado tronco céltico o celta,
ha ido creciendo a pasos agigantados en el
último par de años, después de un gran retroceso
censal a partir de mediados de siglo hasta casi
su completa desaparición durante la década
de los ochenta.
Este interés por su recuperación parte de la
administración autonómica de Galicia que,
consciente de la merma genética, social, cultural
y económica que supondría la desaparición
de esta raza, ha auspiciado, coordinado y puesto
en marcha, directa o indirectamente, los medios
técnicos e infraestructuras necesarios para
la recuperación de la raza, lo que al mismo
tiempo se tradujo en una implicación latente de
los ganaderos en el programa de recuperación,
lo que se ha demostrado con la creación a principios
de 1999 de la asociación de criadores de
ganado porcino Celta (ASOPORCEL), en el
Ayuntamiento de Triacastela, provincia de Lugo,
y además con la puesta en marcha por parte
de esta asociación de un proyecto de recuperación,
conservación y fomento de la raza porcina
Celta.
Actualmente la raza porcina Celta está morfotípicamente
bien definida, cuenta con una asociación
de ganaderos criadores apoyados por la
administración autonómica y lo que es más importante,
está social y científicamente reconocida
la calidad cárnica de sus productos lo que se demuestra
en el interés social que ha despertado la
raza y la gran demanda de ejemplares. Estos
factores unidos hacen augurar un futuro prometedor
a este viejo conocido, habitante de las cuadras
y campos de Galicia.
En la presente publicación se presentan y exponen
las actuaciones realizadas por la administración
gallega a través de la Consellería de Agricultura,
Gandería e Política Agroalimentaria y por
la asociación de criadores de ganado porcino Celta
(ASOPORCEL) para la recuperación de la mencionada
raza, así como aquellas actividades que
se pretenden desarrollar en un futuro próximo.
